- For the dough
- 125 grams butter
- 250 grams Pastry flour
- 50 grams clarified butter
- 100 grams sugar
- 1 egg yolk
- 1 generous pinch lemon zest
- ½ tablespoon Whipped cream (as needed)
For the dough: Combine all dough ingredients in a food processor and process into fine crumbs. Dump crumbs into the work surface and knead. Wrap dough in plastic and chill for 1 hour.
Thinly roll out dough on a lightly floured surface. Use a cookie cutter to create about 70 star cookies. Place cookies on a greased baking sheet.
Bake in an oven preheated to 180°C (approximately 350°F) for about 10 minutes. Remove and let cool.
For the topping: Beat egg whites and stir in powdered sugar, pour into a piping bag with a fine tip and use to decorate cooled cookies. Add sugar pearls, let cookies dry, then serve.
