The ground almonds are full of muscle strengthening protein, bone-strengthening calcium, iron for blood formation and healthy fats. In addition, they are brain food, as the high content of magnesium, phosphorus, vitamin E and niacin has a positive effect on our nerve cells. The vitamin C from the lemon helps us to better absorb the vegetable iron, so the combination of almonds and lemon juice is ideal.

Who would have thought that cookies without flour and butter could be so simple. If you are looking for more cookie recipes, take a look at our cookbook on simple cookies. The biscuits can also be easily modified. How about a chocolate icing, for example? Melt about 100 grams of dark chocolate and spread it on the cookies.

4 egg whites
1 pinch salt
1 tablespoon lemon juice
350 grams powdered sugar
500 grams almonds (ground)
2 teaspoons cinnamon
2 centiliters Cherry brandy
50 grams sugar (for work surface)
50 grams powdered sugar (for dusting)
How healthy are the main ingredients?

Preparation steps

Beat egg whites with salt and lemon juice until stiff. Gradually add powdered sugar. Stir and continue to beat until mixture is glossy and cut resistant. Gently add almonds, cinnamon and cherry brandy. Cover dough and refrigerate for 1 hour. Preheat oven to 170°C (approximately 325°F).

Roll out dough on a sugared surface until about 4 mm (approximately 1/10 inch) thick. Cut out star shapes in different sizes and place on a baking sheet lined with baking paper. Dry overnight at room temperature. Bake in preheated oven for about 10 minutes. Remove and cool. Dust with powdered sugar and serve.
