Stained Glass Gelatin Yogurt Torte
- For the stained glass gelatin
- 5 leaves clear gelatin
- 500 milliliters Apple juice
- 4 tablespoons sugar
- red and blue Food coloring
For the crust, set springform ring on a cake plate. Coarsely crush butter cookies and grind into fine crumbs in a food processor. Melt butter and mix with crumbs. Pour crumb mixture onto plate in cake ring, press firmly and refrigerate.
For the stained glass gelatin, soak gelatin sheets in cold water. Heat apple juice and sugar in a pan, but do not boil. Dissolve gelatin sheets in apple juice mixture and divide in half. With food coloring, dye one portion red and the other portion blue. Pour colored gelatin mixtures into two separate shallow bowls and refrigerate until set, at least 2 hours. Cut red and blue gelatin into cubes.
For the yogurt cream, soak gelatin sheets in cold water.
Mix yogurt, cream cheese, powdered sugar, vanilla sugar and lemon juice. Beat cream until stiff and fold into yogurt mixture. Spread gelatin cubes and yogurt cream over crust in springform ring and smooth top. Refrigerate torte overnight until set.
Remove springform ring from torte and cut into pieces to serve.
