1 cup caster sugar
½ cup liquid Glucose
¼ cup water
1 tsp vanilla extract
3 large egg whites
2 Tbsps Cherry jam (jelly)
2 Tbsps Caramel sauce
2 Tbsps Chocolate syrup
2 Tbsps Shredded coconut

Preparation steps

1.
Combine the sugar, glucose and water in a saucepan, cooking them over a medium heat until the sugar has dissolved. Increase the heat and boil the syrup, undisturbed, until it starts to approach 114°C / 237F on a sugar thermometer.

Beat the egg whites in a heatproof mixing bowl for one minute until frothy. Continue to cook the syrup until it reaches 118°C / 245F and remove it from the heat. Pour a little of the syrup into the whites and beat to incorporate.

Slowly beat in the remaining syrup and continue for 2–3 minutes until thick and frothy. Add the vanilla extract and continue to beat for a further 3 minutes until stiffly peaked.
4.
Divide the mixture evenly between three bowls, swirling cherry jam into one and caramel sauce into another. Fully incorporate the chocolate sauce into the third.
5.
Grease and line three small, square baking tins with greaseproof paper. Scrape the mixtures into each tin and smooth the top with a wetted spoon.
6.
Sprinkle the coconut over half of the chocolate mixture and leave the pralines to cool to room temperature.
7.
Turn them out and cut into squares before serving.
