500 grams filet mignon (springbok)
1 Filo dough
6 thin slices green Bacon
200 grams mixed Fresh herbs
2 egg whites
150 grams Sausage meat
2 egg yolks

For the vegetables
1 stalk Leeks
1 onion
3 tomatoes
2 tablespoons butter
200 grams Crème fraiche
3 egg whites

For the onion confit
200 grams red onions
2 tablespoons vegetable oil
2 tablespoons sugar
100 milliliters Port wine
3 tablespoons balsamic vinegar
½ teaspoon grained Broth
salt
freshly ground pepper

Preparation steps

For the onion confit: Peel and coarsely chop onion. Heat oil in a saucepan, sauté onions lightly, sprinkle with sugar and caramelize, stirring constantly. Deglaze with port wine, vinegar and 50 ml (approximately 1.7 ounces) of water. Stir in broth, season with salt and pepper and simmer for 30-40 minutes over low heat. Stir occasionally and add water as needed.

For the fillet: Rinse fillet, pat dry and season with pepper. Rinse herbs, shake dry and mince. Beat egg whites with 1 teaspoon salt until stiff and fold in herbs. Combine fillets and yolks and season with salt and pepper.

Spread filo onto a cotton cloth. Top with fillets and egg white mixture and sausage. Top with bacon strips. Carefully fold filo around fillets. Place on a greased baking sheet and bake in an oven preheated to 180°C (approximately 350°F) for 20-30 minutes.

For the vegetables: Cut leeks in half lengthwise, rinse, remove roots and thinly slice. Blanch tomatoes blanch for a few seconds, shock in ice water, peel, quarter, core and dice flesh. Peel and dice onions. Combine egg whites and cream fraiche. Heat butter in a pan and sauté onions and leeks. Add tomatoes and season with salt, pepper and nutmeg. Pour egg white mixture into the pan and cook over low heat.

Slice fillets and serve with onion confit and vegetables.
