Ingredients

For the muffins
½ cup butter
½ cup caster sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon Baking powder
1 pinch salt
½ cup milk
1 cup Chocolate chip
For the icing
2 ½ cups powdered sugar
1 tablespoon lemon juice
water
0.333 cup cream (38% fat)
5 ounces Dark chocolate (60% cocoa solids, chopped)

Preparation steps

1.
For the muffins: heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 12 hole muffin tin.

Beat the butter and sugar in a mixing bowl until light and fluffy.

Gradually beat in the eggs, beating until fully incorporated into the mixture.

Sift in the dry ingredients and gently stir into the mixture. Stir in the milk and chocolate chips

Spoon into the tins and bake for about 25 minutes, until golden. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.

For the icing: sift the icing sugar into a bowl and beat in the lemon juice and a little water until thick enough to coat the back of a spoon. Spread the icing on top of the cupcakes, allowing it to run down the side. Leave to set.
7.
Bring the cream to a boil in a small pan. Pour over the chocolate and leave for a few minutes until the chocolate has melted. Stir gently until smooth and allow to cool slightly.
8.
Pour the chocolate mixture into a piping bag with a small tip and pipe rings inside each other onto the white icing. Using a cocktail stick, draw a line from the middle of the cake to the edge to create a spiderweb effect.
