Sponge Cakes with Lavender
Butter beat until foamy. Alternately stir in sugar and eggs. Mix salt with 2 tablespoons of rum and stir in baking powder. Add to batter. Batter should be smooth and easy to spread. If needed, add more flour or a bit of milk.
Grease mini cake pans with butter and dust with flour. Pour in batter, smooth and bake in a preheated oven at 180°C (approximately 350°F) for 50 minutes or until golden brown.
Remove cakes from pans. Mix lemon juice, honey and remaining rum. Drizzle over cakes and let soak. Cool cakes.
Serve cakes dusted with powdered sugar and garnished with lavender flowers.
