Spinach Salad with Pear, Bacon and Stilton

- 2 handfuls Spinach
- 4 Pear
- olive oil
- 150 grams Bacon
- 150 grams Stilton cheese
- 3 Tbsps balsamic vinegar
- 1 Tbsp lemon juice
- 1 tsp grainy Mustard
- 1 pinch sugar
Preparation

Rinse, trim, and dry the spinach. Peel and quarter the pears, then remove the core and slice. Brush a grill pan with oil and broil the pears until golden brown on both sides, about 3-4 minutes. Cut the bacon into strips. Sauté in 1 tablespoon of oil in a separate pan. Remove the pears and the bacon from the pans, and let cool slightly. Divide the spinach onto plates, and top with the pears and bacon. Crumble the stilton over the top.

Mix 4-5 tablespoons of olive oil with the vinegar, lemon juice, mustard, and sugar. Season to taste with salt, drizzle over the salad, and serve.
