3 tablespoons butter
18 ounces sugar
4 teaspoons Curry powder
3 Star anise
1 tablespoon freshly grated ginger
3 tablespoons lemon juice
3 ounces Apple juice (or water)
1 teaspoon salt

Preparation steps

1.

Rinse and dry cranberries. Heat butter in a pan and saute cranberries for about 3 minutes, stirring.

Add all remaining ingredients and simmer on a low heat until cranberries are soft.

Pour into sterilized preserving jars, seal well. Turn jars upside down and cool. Return jars to normal position and store in a cool, dark place. Serve as needed.
