40 grams Marzipan
175 grams softened butter
125 grams brown sugar
1 pinch salt
1 egg
1 teaspoon Ground cinnamon
1 generous pinch ground cloves
1 generous pinch ground Cardamom
125 grams Pastry flour
125 grams Spelt flour (type 603)
75 grams ground almonds (blanched)
cornstarch (to work)
2 tablespoons milk

Preparation steps

Mash the marzipan with a fork finely. Beat the marzipan with the butter, brown sugar and salt until creamy. Stir in the egg, ground cinnamon, cloves and cardamom. Add the both types of flour and the ground almonds, and knead to a smooth dough. Add more cold water or flour as needed to achieve the desired consistency. Shape the dough into a ball, wrap in plastic wrap, and leave for about 1 hour in the refrigerator.

Roll out the dough to about 5-6 mm thick on a work space lightly dusted with cornstarch. Cut out the rolled dough into rectangles and place on a baking tray lined with baking paper.

Brush the rectangles with milk and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) until golden brown, about 15 minutes.

Carefully remove the cookies from the baking tray and let cool on a wire rack.
