cinnamon (broken in half)

clear honey

rosemary (leaves only)

rabbit stock (or chicken stock)

sliced almonds
1 tablespoon
Cilantro (chopped)

Preparation steps

1.
Season the rabbit pieces with salt and pepper.
2.
Heat the oil in a large pan over a medium heat.
3.
Add the rabbit pieces and cook gently for about 4 minutes on each side, until browned. Remove from the pan and set aside.

Reduce the heat and add the onions, garlic, cumin seeds, cinnamon, cloves, coriander, ginger and paprika to the pan. Fry gently for 6-8 minutes, until the onions are softened.

Stir in the wine and simmer for 2-3 minutes.

Return the rabbit pieces to the pan and add the honey, thyme, rosemary and stock. Bring to a boil, cover and simmer gently for 45 minutes.
7.
Uncover and add the cider vinegar and raisins.
8.
Increase the heat and cook for 15-20 minutes to reduce the sauce. Stir in the almonds.
9.
Remove the cinnamon sticks and cloves and sprinkle with chopped coriander.
