If you don't have mie noodles, feel free to substitute with whole-wheat spaghetti.

cup Apple juice
1 Lime (juiced)
1 teaspoon Palm sugar
1 Lemongrass (outer leaves removed, cut into rings)
5 Star anise
1 Cinnamon stick
3.333 cups Peaches (peeled and sliced)
14 ounces mie noodles (thin Asian wheat noodles)
2.333 cups Chicken breasts (skinless, boneless, cut into strips)
2 tablespoons Wheat germ oil
3 scallions (cut into rings)

Preparation steps

1.
Mix together the apple juice, lime juice, sugar, lemongrass, star anise and the cinnamon stick and heat in a small pot. Add the peaches, remove from the heat and leave to cool.

Cook the noodles in boiling salt water until al dente. Drain and quench.
3.
Fry the chicken in hot oil on all sides. Season with salt and ground black pepper and stir in the spring onions. Set aside.
4.
Mix together the noodles with 2/3 of the peaches, some juice, the meat and the spring onions and arrange in a bowl. Serve the remaining peaches separately.
