150 grams brown cane sugar
10 grams potatoes
1 tablespoon Rum
500 grams Molasses
100 grams brown sugar
600 grams Pastry flour
60 grams minced candied orange
1 teaspoon cinnamon
1 teaspoon ground anise seed
1 teaspoon cilantro
1 generous pinch Ground clove
3 tablespoons milk
350 grams powdered sugar
Sugar pearls
Red Food coloring

Preparation steps

Dissolve the baking soda in the rum. Heat the molasses with sugar and 4 tablespoons of water until the sugar is dissolved.

Mix flour with sugar, orange peel, cinnamon, anise, coriander and cloves. Add the baking soda and molasses mixtures and knead into a dough. Wrap in plastic wrap and let chill in the refrigerator for 4 hours. Roll out the dough to be 0.5 cm thick (approximately 1/4 inch). Cut into rectangles and place on a 3x7 greased baking sheet with 2 cm (approximately 3/4 inch) distance in between each cookie. Brush with the milk and bake on the center rack of an oven at 180°C (approximately 350°F) for 10-12 minutes.

Stir the powdered sugar with 3-4 tablespoons of water until a thick icing is formed. If desired, mix a portion of it with red food coloring. Spread the icin on the gingerbread and decorate with red icing and sugar pearls as desired.
