Preparation steps

1.
Place the flour in a bowl and create a well in the middle. Crumble in the yeast and add 1 tsp sugar. Stir in 3-4 tbsp of the milk, cover and leave to rise for around 15 minutes.

Add the remaining sugar and milk, the egg and the butter and mix well to create a smooth dough that falls away from the sides of the bowl. Add more milk or flour as necessary. Cover and leave to rise in a warm place for around 1 hour.

To make the filling, melt the butter and leave to cool slightly. Mix the sugar and the cinnamon.

Roll out the dough on a flour work surface approx. 45 x 55 cm. Brush with about 4 tbsp butter and sprinkle with the chocolate chips and the cinnamon-sugar.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.

Fold one side over by 1/3 and then fold the other side over it so that the dough has three layers. Cut into 20 narrow strips and twist them. Tie in knots and place on the prepared baking tray. Brush with the remaining butter and sprinkle with the remaining cinnamon-sugar.
7.
Bake for around 15 minutes until golden brown. Leave to cool and serve dusted with icing sugar.
