Spiced Almond and Honey Cookies
Thanks to the almonds, these cookies are high in vitamin E and numerous unsaturated fatty acids, which support cardiovascular health.
You can decorate these fine gingerbread biscuits as you like with icing, sprinkles or chocolate.
Place the chopped butter with the honey and brown sugar in a saucepan and heat while stirring until the sugar has dissolved. Transfer the butter-sugar mixture to a large mixing bowl and let cool.
Add the ground almonds, 2 cups flour, ground cinnamon, gingerbread spice, lemon zest, and the egg to the butter-sugar mixture and knead thoroughly with a hand mixer (dough hook). Add little more flour if dough is sticky.
Mix the salt with the rum in a small bowl until smooth. Add to the dough and continue kneading until the dough no longer sticks to the edges of the bowl, and becomes smooth and glossy.
Cover the bowl with a plastic wrap and let the dough rest in the refrigerator overnight.
Line a baking tray with parchment paper.
Roll out the dough on a floured surface and cut out round cookies or cut out figure-shaped cookies. Place the cookies on the baking tray and bake in a preheated oven at 350°F for 15-20 minutes.
Remove the baking tray from the oven, cool slightly and carefully remove the cookies from the baking tray. Cool the cookies on a wire rack.
