Spelt Cookies with Anise
Beat the butter until creamy in a bowl. Add the sugar, vanilla sugar, ground anise, orange zest and the eggs to the butter, and mix until creamy. Mix the baking soda into the spelt flour and fold into the egg mixture to form a thick, spreadable batter. If the batter is too thick, add some more milk. Cover the dough and let rest for about 30 minutes in the refrigerator.
Fill the batter into a piping bag with a serrated nozzle and pipe out the batter in shape of swabs on a baking tray lined with baking paper. Place in the refrigerator again for about 30 minutes.
Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) until golden, about 12 minutes.
Remove the tray from the oven and let the cookies cool.
