Sparkling Wine Cocktail Dessert

- 2.333 cups Strawberries (halved, reserving 4 large strawberries whole)
- 1 ⅔ cups Champagne (alternatively sparkling wine or prosecco)
- 1 ½ cups strawberry Ice cream
- 4 teaspoons chopped Pistachio

- 4 Cocktail Glasses
Purée the strawberries with a stick blender. Tip into four cocktail glasses, top up with champagne and add 1 scoop of strawberry ice cream to each glass.
Slice the reserved strawberries vertically and cut into heart shapes with a cutter or a knife. Decorate the glasses with the hearts and scatter 1 tsp chopped pistachios over each one.
