Beat the butter and sugar in a mixing bowl until light and fluffy. Beat in the egg and vanilla until smooth.
Add the flour and mix to a smooth dough.
Turn out onto a lightly floured surface and knead lightly until smooth. Shape into a log about 5cm|2" diameter and 20cm|8" long. Wrap in cling film and chill for 1 hour.
Heat the oven to 190°C (170° fan) 375°F gas 5.
Cut the dough into 5mm|1/4" slices and place apart on two baking trays. Brush with beaten egg white and sprinkle with sugar.
Bake for 12-15 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
