Rinse fruit in hot water and cut into slices. Pour into a carafe and drizzle with honey. Pour in enough water to barely cover the fruits.

Add lemon balm and refrigerate for about 1 hour. Then fill about 1/3 full with ice cubes and top the carafe with cold sparkling water. Serve immediately.
