4 tablespoons extra virgin olive oil
2 medium onions (peeled and chopped)
8 ounces sliced Mushrooms
8 cloves garlic (sliced thinly)
16 ounces ground Beef
15 ounces canned, whole tomatoes
15 ounces canned, crushed tomatoes
2 tablespoons fresh oregano
2 tablespoons fresh Basil
1 teaspoon dry thyme
freshly ground Black pepper (to taste)
16 ounces Spaghetti
Parmesan (grated or shaved; to serve)

Preparation steps

In a medium saucepan, heat olive oil over medium high heat. Add onions, mushrooms and garlic; sauté for 5 minutes, or until onions are soft and translucent.

Add ground beef, breaking apart with wooden spoon, and cook until browned. Add whole tomatoes, stirring and breaking into small pieces with the back of your spoon. Add crushed tomatoes, oregano, basil, thyme and ground pepper. Mix ingredients well. Cover skillet; reduce heat and simmer 25 to 30 minutes.

Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, 8 to 9 minutes. Drain well and toss with sauce. Divide between plates and serve with Parmesan cheese on the side.
