Preparation steps

1.
Heat the vegetable oil in a large frying pan, add the onion and carrots and cook, stirring frequently, for about 10 minutes until the onion is soft.

Add the mushrooms and cook for 5 minutes.

Add the tomatoes, herbs, and tomato puree and stir well.

Stir in the soya mince and season with salt and pepper. Cover and simmer for 12-15 minutes until the vegetables are cooked and the mixture is thick.

Heat the grill.

Mix together the olive oil, vinegar and pepper and brush over the mushroom caps and peppers.
7.
Put the mushrooms and peppers into a grill pan and grill for 3-5 minutes on both sides. Cool until easy to handle, then slice the mushrooms.
8.
Heat the taco shells according to the packet instructions.
9.
Spoon the soya mince into the tacos, then add the mushrooms and peppers.
10.
Sprinkle with spring onion rings and coriander. Serve with tomato sauce.
