350 grams Puff pastry dough (frozen)
750 milliliters milk
125 grams sugar
4 eggs
1 tablespoon butter
1 pinch salt
1 Cinnamon stick
1 Vanilla bean
1 tablespoon vanilla Instant pudding
2 tablespoons Cornmeal
1 tablespoon Pastry flour
Almond extract
Cinnamon sugar

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Defrost the puff pastry, then line a tart tin with it. Mix 4 tablespoons milk with the pudding powder, cornmeal and flour to make a smooth dough. Boil the remaining milk with the  butter, cinnamon stick, vanilla bean, and salt. Gradually add the pudding miture, stirring until smooth. Add half of the sugar and almonds, stir and continue to boil. Remove from the heat and remove the vanilla and cinnamon. Separate the eggs. Stir the egg yolks gradually into the hot mixture. Beat the egg whites with remaining sugar until stiff and carefully fold into the mixture. Pour the filling on the pastry and bake until golden brown, 30-40 minutes in the preheated oven. Leave in the half-opened oven to cool. Sprinkle with cinnamon sugar and serve lukewarm.
