Soufflé with Orange and Lavender
Grease 4 souffle dishes measuring about 8 cm (approximately 3 inches) and sprinkle with sugar. Bring milk to a boil in a small saucepan. Knead flour and butter together and shape into a roll. Cut roll into small pieces. Slowly add to boiling milk until mixture is completely blended. Remove from heat. Preheat oven to 200°C (approximately 400°F).
Pour mixture into a bowl and cool. Place back in pot, gradually add egg yolks and whisk while cooking until smooth and creamy. Add orange juice and orange flavoring. Beat remaining egg whites with honey until stiff and gently fold into mixture.
Fill souffle dishes to about 1 cm (approximately 1/2 inch) below rim. Place in a water bath in oven measuring 80°C (approximately 175°F). Water should reach half-way up souffle dishes. Bake for about 30 minutes. Remove souffle dishes, decorate with candied lavender and orange and serve hot.
