For the souffle
300 milk
60 grams Raw sugar
½ packet Vanilla sugar
½ organic Orange (zested)
50 grams Pastry flour
4 eggs
75 grams almonds
2 organic Oranges
1 Tbsp Orange juice
For the ramekins
1 Tbsp butter
1 Tbsp fine breadcrumbs
powdered sugar

Preparation steps

For the souffle: whisk milk with sugar, vanilla sugar, salt, orange zest on low heat and bring to a boil. Place into an ice water bath and cool, whisking. Butter four ramekins and sprinkle with breadcrumbs. Separate eggs. Whisk egg yolks into cooled milk mixture. Squeeze orange juice and add to the mixture. Add flour. Beat egg whites until stiff and fold into the mixture. Coarsely chop almonds adn fold into the batter. Bake in preheated oven at 180°C (approximately 350°F) for about 35 minutes.
