Preparation steps

Toast the baguette slices in a grill pan - if desired spread with a little olive oil beforehand.

Mix together the tomatoes, spring onions, olives and basil and stir in the olive oil and vinegar. Season with salt and ground black pepper.
3.
Grill the goats' cheese and then place it on the baguette slices and top with the tomato salad. Serve either cold or lukewarm.
