1 tablespoon lemon juice

1 lemon (quartered and cut into wedges)

Preparation steps

1.

Line a terrine mold with plastic wrap leaving a 2-inch overhang all around. Press half of the smoked salmon slices on the bottom and sides of the mold.

Soften the gelatine in cold water. In a bowl, mix the cream cheese with the crème fraîche, lemon juice and dill and season with salt and pepper. Squeeze the soaked gelatin and place it in a small saucepan and heat until melted. Add 2 tablespoons of the cream cheese mixture and stir until well combined. Add this to the rest of the cream and stir until smooth.

In a mixing bowl, whip the cream until stiff peaks form and gently fold it into the cream cheese mixture. Spoon half of the mixture into the terrine and top with half of the remaining salmon. Cover with the remaining cream cheese mixture. Cover with the remaining salmon and refrigerate until set, about 3 hours.

Invert the terrine onto a platter and remove the plastic wrap. Serve garnished with lemon wedges and sage leaves.
