Smoked Salmon on Whole Wheat

- 1 small Cucumber
- ½ small lemon
- 4 Tbsps cream cheese
- salt

- 1 sm handful baby Spinach
- 1 small shallot
- 1 Whole wheat baguette (or other whole-grain bread)
- 1 oz Smoked salmon (in slices)
Rinse and dry the cucumber, halve lengthwise and scoop out seeds with a spoon. Finely grate the cucumber on a box grater.
Stir cream cheese to blend well.
Put the cream cheese in a bowl. Squeeze juice from the lemon and add juice and cucumber. Season with salt and pepper and stir to combine.
Rinse the spinach in several changes of cold water, then spin dry well.
Peel the shallot and very finely dice. Split the baguette rolls and spread cream cheese mixture on bottom halves.
Layer bottom roll halves with spinach and smoked turkey and sprinkle with the chopped shallots. Sandwich with top roll halves and serve.
