liter Red wine
liter Beef broth
2 tablespoons vegetable oil
1 tablespoon cold butter
salt
freshly ground peppers
2 tablespoons hot Mustard

Preparation steps

Wrap the prunes with Kassler slices and secure with toothpicks.

Sear in hot oil on all sides, then deglaze with red wine, broth and lemon juice. Cover and simmer about 10 minutes over low heat. Then remove rolls and let liquid boil down until reduced by more than half. Season with salt and pepper, then remove from the heat and stir in the cold butter. Return the ham and prune rolls again, brush with a little mustard, sprinkle with pepper and serve.
