4 cold smoked Kippers
2 scallions
½ Cucumber
80 grams softened butter
1 Tbsp scallions
freshly ground peppers
freshly grated Nutmeg
lemon juice

Preparation steps

1.

Place the smoked herring fillets in a bowl and cover with boiling water. Let stand for about 4 minutes. Drain and cool. 

2.

Rinse and finely chop the scallions. Halve the cucumber, scrape out the seeds and chop finely.

3.

Remove the skin from the fish and mash the fillets with a fork. Mix in the softened butter, cucumber, scallions and chives. Season with salt, pepper, nutmeg and lemon juice. Serve with fresh bread.
