In this recipe, the pears are not soft boiled with a lot of sugar, but slowly cooked in an aromatic broth. This preserves the vitamins and makes it taste better with less sugar. The yogurt provides us with calcium, the most important mineral for bones and teeth.

If you want to save more sugar, the cane sugar can be replaced by sweetener. If you don't pay strict attention to your fat account, sprinkle a few chopped, roasted walnuts over the dessert and achieve a more favourable fatty acid profile.

4 tablespoons spicy honey (Eg., thyme honey)
1 small Vanilla bean
2 ripe Pear
½ cup white wine (or pear juice)
1 ounce cane sugar
1 stalk cinnamon
1 ounce Amaretti cookies

1 Pot, 1 Small bowl, 1 Plate, 1 Measuring cups, 1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Peeler, 1 Sieve, 1 Kitchen towel (or cheesecloth), 1 Citrus juicer

Preparation steps

The day before, line a strainer with cheesecloth or a thin, clean kitchen towel and place over a bowl. Pour in yogurt, fold edges of the towel over the top and cover with a heavy plate. Refrigerate and let drain 12-24 hours.

Juice lemon, and measure 1 tablespoon juice. Transfer drained yogurt to a bowl. Stir in lemon juice and half of the honey. Return yogurt to refrigerator.

Halve vanilla bean lengthwise, and scrape out seeds. Rinse pears, peel, halve and remove cores. Cut pears into thick pieces. In a pot, combine wine or juice, sugar, remaining honey, vanilla bean and seeds and cinnamon. Bring to a boil.

Add pear slices. Cover and simmer over medium heat for 15-20 minutes. Drain pears in a sieve, reserving the cooking liquid.

Pour cooking liquid back into the pot. Simmer over medium heat until syrupy. In a bowl, combine 1/3 of syrup with pears. Crumble the cookies. Divide pears among 4 plates, spoon yogurt over the top and sprinkle with crumbled Amaretto cookies. Spoon remaining syrup onto the plates and serve immediately.
