1 Roasting pan, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Slotted spatula, 1 Aluminum foil, 1 Plate

Preparation steps

Rinse scallions, pat dry and cut the white and pale-green parts into 5 cm (approximately 2-inch) lengths.

Rinse apples, cut into quarters and remove the core and seeds.

Rinse meat and pat dry, then season with salt and pepper. Heat the oil in a roasting pan over medium-high heat. Cook meat until browned on all sides, stirring frequently, then transfer to a plate.

Add scallions and apples to the roasting pan and cook until softened, stirring frequently. Remove from pan.

Pour Marsala wine into the roasting pan and deglaze, stirring up browned bits from bottom of the pan, then stir in the veal stock.

Rinse thyme, shake dry, pluck leaves and crush slightly. Return meat to roasting pan, then add thyme, cover and roast in a preheated oven at 200°C (fan is not suitable, gas mark 3)(approximately 400°F/do not use convection setting), on the 2nd rack from the bottom, until meat is very tender, about 1 1/4 hours.

After 35 minutes, turn the roast, return apples and scallions to the pan and continue to simmer.

Remove the veal, wrap in aluminum foil and let rest 5 minutes. Return sauce to a boil, season with salt and pepper and serve with the roast.
