Smarter Baked Apples on Yogurt

- 1 Tbsp dried Cherries
- 1 Tbsp dried Cranberry
- 1 Tbsp golden raisin
- 6 Tbsps Apple juice
- 2 tart Apple
- 1 Tbsp chopped almonds
- ½ Vanilla bean
- 1 Tbsp cane sugar
- 5 ozs Yogurt (low-fat)
- 2 Tbsps eggnog
Soak the dried cherries, cranberries and raisins with 2 tablespoons apple juice in a small bowl.
Rinse the apples and remove cores.
Mix the chopped almonds with the soaked dried fruit.
Using a teaspoon, divide the filling among the apples and arrange apples upright in a baking dish.
Pour the remaining apple juice into the baking dish. Bake in a preheated oven at 400°F until cooked through, 30-35 minutes.
Meanwhile, split the vanilla bean lengthwise, scrape out the seeds with a sharp knife and mix with the sugar.
Stir the vanilla sugar with the yogurt and eggnog until smooth. Serve apples topped with yogurt mixture.
