Small Vanilla Whoopie Pies
Preheat the oven to 160°C (approximately 325°F). For the cookies, cream butter with powdered sugar using an immersion blender. Stir in vanilla and egg. Pour in buttermilk and thoroughly whisk. Mix flour with baking powder and stir into batter. Pour batter into a piping bag with a round opening about 1.5 cm (approximately 1/2 inch) wide. Pipe small dots on a baking sheet lined with baking paper, leaving some room in between. Use a damp spoon to slightly flatten and bake for 10-12 minutes or until light yellow. Remove and cool on baking paper.
For the cream, mix butter with sugar until white and creamy. Mix in marshmallow creme and spread mixture on half of the cookies. Top with a second cookie. Serve chilled.
