- ¼ l white wine
- ¼ l Game stock
- 1 Rabbit (ready to cook pieces)
- 4 allspice
- 6 peppercorns
- 1 bay leaf
- 1 shallot
- 50 grams button Mushroom
- 2 Tbsps butter
- 1 Tbsp Pastry flour
- 2 Tbsps Cognac
- salt
- freshly ground peppers
- 4 Puff pastry
Preparation steps

Bring the white wine and broth to a boil and add the rabbit meat to the pot. Add the allspice, peppercorns and bay leaf. Cover and simmer about 30 minutes over low heat. Remove the cooked meat, and cut into small cubes. Drain the broth through a sieve and set aside. Peel the shallot and chop finely. Trin the mushrooms and cut into small cubes.

Sauté the mushrooms and shallot together in a pan with butter. Sprinkle with flour and deglaze with Cognac. Pour in the reserved broth and simmer for about 5 minutes. If necessary thicken with cornstarch or add some cream. Season with salt and pepper, add the meat cubes and pour into pre-baked puff pastry shells. Serve garnished with chervil leaves.
