Preparation steps

Grease the ramekins with butter. Rinse the orange in hot water, pat dry, remove 1 tablespoon of zest and squeeze the juice. Separate the eggs. Mix the yolks with 80 grams (approximately 3 1/2 tablespoons) sugar, vanilla sugar, and a pinch of salt until fluffy. Stir in 3 tablespoons of orange juice and the orange zest.

Peel the carrot, grate finely and stir into the egg yolk mixture. Mix the almonds, flour and baking powder into the yolks. Beat the egg whites until stiff, sprinkle in the remaining sugar and fold into the mixture. Pour the batter into the prepared ramekins and bake in a preheated oven at 180°C (approximately 350°F) (convection oven 160°C or 325°F) on the middle rack for 30-40 minutes. Check with a toothpick for doneness.

Remove the cakes from the molds and allow to cool on a rack.

Mix the icing sugar with 2 tablespoons orange juice. Coat the cakes with the icing and decorate with marzipan carrots. Allow to dry and serve.
