Preparation steps

Sift the flour into a bowl, make a well in the middle and crumble the yeast into it. Stir some flour from the edge into the yeast with some milk. Cover and let rise 15 minutes. Add the remaining milk with the apple juice, egg, egg yolk and salt. Add the butter in small pieces and knead to a smooth dough. Cover with a cloth and let rise another 50-60 minutes, until the dough has doubled in size.

Rinse the raisins with hot water, pat dry and cover with calvados. Heat the frying oil to 170°C (approximately 340°F). Knead the dough again and mix in the raisins. In 2 tablespoon portions, fry the donuts 2-3 minutes. Drain on paper towels and roll in sugar. Arrange on a plate and serve immediately.
