Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Brush the oven-proof ramekins with butter and coat with breadcrumbs.

Beat together the egg yolks, butter, salt and a pinch of nutmeg until frothy. Beat in the cheese, cream and crème fraîche.
3.
Whisk the egg whites until stiff. Fold into the mixture together with the flour.
4.
Spoon the mixture into the ramekins and bake in the oven for 15-20 minutes until golden. Serve immediately.
