For the pastry

cooking apples (peeled, cored and sliced)

ground cinnamon

Preparation steps

1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Grease a 24cm|10" deep cake tin.
2.
For the pastry: put the flour into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar, and 3/4 of the eggs and mix to a dough. Knead lightly until smooth.

Roll out 3/4 of the dough on a floured surface and line the base and sides of the tin.

For the filling: mix together the apples, sugar, sultanas and cinnamon and put into the pastry case.
5.
Roll out the remaining dough and cut out long strips. Cover the apples with the strips in a lattice and press lightly. Brush with the remaining beaten egg.
6.
Bake for about 1 hour until the pastry is golden. Cool in the tin for 15 minutes, then place on a wire rack to cool completely.
