Veal loin (or fillet)

Rosemary leaves (finely chopped)

... Sprinkle the veal with a little cayenne pepper for a spicier dish.

Preparation steps

1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Rub the joint with rosemary, salt and pepper and olive oil.
3.
Heat a little more oil and the butter in a roasting tin and sear the meat on all sides until golden.
4.
Add the stock and garlic cloves and roast in the oven for about 15 minutes. Leave to rest while cooking the vegetables.

Meanwhile, bring the chicken stock to the boil and add the carrots and mushrooms and a little seasoning.

Simmer for 15 minutes or until the carrots are tender. Remove the vegetables with a slotted spoon and add the pasta. Cook according to packet instructions. Drain, reserving the stock.
7.
Remove the veal from the roasting tin and place the tin over the heat. Using a wooden spoon scrape up all the residue at the bottom and deglaze with a cup of reduced chicken stock.
8.
Simmer for 2 minutes or so and adjust the seasoning. Slice the veal thinly and serve with the braised vegetables and pasta alongside.
