Silver Dollar Banana Pancakes
Combine the flour, sugar, baking powder, vanilla sugar and salt in a large bowl. Add in the milk and mix well. Peel and mash 2 of the bananas and add to the batter along with the egg. Mix until smooth. Thinly slice the remaining banana.
Heat about 1 tablespoon of oil in a pan and ladle 1-2 tablespoons into the pan. Place a couple of banana slices on the top and cook for about 2 minutes, until small bubbles form on the top of the pancake. Flip and cook the other side for about 1 minute. Cover to keep warm and continue with the remaining batter and bananas. Serve with butter and maple syrup, if desired.
