Spread quark over the toast slices.

Cut about half of the cress from the bed and divide between toast slices.

Rinse radishes, wipe dry and cut out 2 "eyes" and "eyebrows" from each one. Chop remaining radishes finely and sprinkle on top of one toast slice. Season lightly with salt and pepper and sprinkle with paprika.
