2 Cut about half of the cress from the bed and divide between toast slices.
3 Rinse radishes, wipe dry and cut out 2 "eyes" and "eyebrows" from each one. Chop remaining radishes finely and sprinkle on top of one toast slice. Season lightly with salt and pepper and sprinkle with paprika.
4 Top with the other toast slice and press firmly. To decorate, press the radish eyes and eyebrows on bread. Cut remaining cress from the bed and arrange as "hair".
5 Finally, cut sandwich in half in a zigzag manner for a "monster mouth" appearance. If you prefer a smiley face, cut it in half in a semicircle.
