Shrimp with Polenta and Tomato Sauce

800 grams fresh shrimp (ready to cook)
1 can Organic tomato (diced, 400 grams)
1 garlic clove
1 small onion
2 Tbsps finely chopped parsley
100 milliliters Shellfish broth
olive oil (cold-pressed)
salt
freshly ground peppers
freshly grated Nutmeg
1 tsp sugar
350 grams Polenta (instant)

Preparation

Peel the onion and chop finely. Peel the garlic. Heat 2-3 tablespoons oil in a large pan and fry the onion gently. Add tomatoes and garlic, bring to a boil, then reduce the heat and cook until reduced about 2/3. Pour in broth and simmer for another 5 minutes. Season with salt, pepper, nutmeg and sugar. Rinse the shrimp, under cold running water and drain on paper towels, then place in the sauce. Cover the pan and cook over low heat until the shrimp is done, 5-10 minutes. Season with salt and pepper and stir in the parsley.

Cook the polenta according to package instructions. Arrange polenta on plates, top with shrimp and sauce and serve immediately.
