Preparation steps

1.

Rinse and dry the lettuce. Place two pieces of lettuce onto 4 plates.

Rinse and halve the tomatoes. Rinse, trim, and slice the scallions. Halve the avocado, remove the seed, and cut the flesh into cubes.

3.

Mix the avocado with the tomatoes, scallions, lime juice, and oil. Add the paprika, and season to taste with salt and pepper. Fold the shrimp into the avocado mixture.

4.

Top the lettuce with the shrimp mixture, and serve.
