1 ½ cups flour
½ tsp Baking powder
½ tsp salt
¼ cup butter (chopped)
½ cup sugar
½ cup milk
1 cup double cream
1.333 cups Strawberries (sliced)

Preparation steps

1.
Heat the oven to 200C (180C fan) 400F, gas 6.
2.
Whizz the flour, baking powder, salt, butter and 50 g of the sugar, or rub together, until the mixture resembles breadcrumbs. Pour in the milk and mix to make a firm dough - add a little more milk if necessary.
3.
Roll the dough onto a floured board to a thickness of about 1/2 cm and cut out circles about 6 cm diameter. Place on a greased baking sheet and bake for 10 - 15 minutes or until golden brown. Place on a cooling rack and let cool completely.
4.
Whip the cream until it forms stiff peaks and fold in the remaining sugar. Sandwich the cooled shortcakes together with a little whipped cream
