275 grams soft butter
150 grams sugar
1 pinch salt
400 grams Pastry flour
1 teaspoon Baking powder
Pastry flour (for work surface)
For the coating
200 grams Dark couverture chocolate
50 milliliters Whipped cream (at least 30% fat content)

Preparation steps

For the dough: Whip softened butter with sugar and a pinch of salt until fluffy. Mix flour with baking powder thoroughly, sift and knead quickly with butter mixture into a dough. Shape into a ball, wrap in foil and let stand for 2 hours in the refrigerator. Preheat oven to 190°C (approximately 375°F).  Line a baking sheet with parchment paper. Roll out dough on a floured surface 1 cm (approximately 3/8 inch) thick and 2 cm (approximately 3/4 inch) wide and cut into 4 cm (approximately 1-1/2 inch) long strips.

Widely space on prepared baking sheet and bake in preheated oven for about 15 minutes. Remove and let cool briefly.

For the coating: Coarsely chop chocolate and melt over a bowl of hot (not boiling) water. Add cream, stir and remove chocolate from heat. Dip cookies 1cm (approximately 3/8 inch) deep into chocolate, place a cooling rack, allow to dry and serve.
