Ingredients

For jam filling
200 grams Raspberry jam
powdered sugar (for dusting)
For the dough
6 egg yolks
1 tsp Vanilla sugar
1 kilogram Pastry flour
4 tsps Baking powder
3 Tbsps milk
room temperature butter (for baking sheets)

Preparation steps

Preheat oven to 220°C (approximately 425°F). Mix together all ingredients for cookie dough until smooth. Transfer dough to a cookie press or pastry bag. Coat 2 baking sheets with butter. Place pastry rings, each about 5 cm (approximately 2 inches) in diameter, onto baking sheets. Press or pipe cookies into pastry rings. One baking sheet at a time, bake in cookies, 10-12 minutes. Remove cookies from baking sheet and let cool.

In a saucepan, bring jam and 3-4 tbsp water to a boil, stirring constantly. Cook until thickened. Place a small amount of jam on half of the cookies. Top with remaining cookies to form sandwiches, and sprinkle with powdered sugar.
