240 grams butter
5 hard-boiled egg yolks
120 grams cornstarch
1 Vanilla bean
120 grams powdered sugar
200 grams Pastry flour
1 generous pinch lemon zest
1 pinch salt
For the topping
250 grams powdered sugar
green Food coloring
2 tablespoons lemon juice

Preparation steps

The yolks through a sieve press. Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Save the vanilla pod for another use.

Knead all ingredients for the dough quickly into a smooth dough. Shape into a disc, cover with plastic wrap and refrigerate for 1 hour.

Roll out the dough on a floured surface about 4 mm (approximately 1/8 inch) thick. Cut out trees using a cookie cutter.  Transfer to a parchment-lined baking sheet. Bake in an oven preheated to 150°C (approximately 300°F) for 13 to 15 minutes. Let the cookies cool completely on a wire rack.

Stir together the food coloring, powdered sugar and lemon juice. Ice the cookies with the thick frosting and let dry before serving.
