Preheat the oven to 180°C (approximately 360ºF) using top and bottom heat where possible.
For the cake, combine the butter with the sugar and the eggs until creamy. Mix the flour with the cocoa, almonds and baking powder and alternate stirring it into the butter mass, along with the buttermilk.
Pour the cake mixture smoothly into a springform pan lined with baking paper. Bake in the oven for 25-30 minutes. Remove, let cool completely and then crumble into a bowl.
Beat the butter with the icing sugar until creamy and gradually stir in the cream cheese. Knead with the cake crumbs and from the mixture into small balls. Insert a popsicle stick into each one and place in the refrigerator for around 1 hour.
For the decoration, melt the chopped chocolate over a pan of hot, not boiling water. Remove from the heat and let it cool slightly. Dip the popsicle cakes into the chocolate dip, drain by rotating and place upright in a glass filled with sugar and leave to set.
Create ear shapes from the black fondant stick them on with the dark chocolate. Cut out eyes from the white fondant with a straw and apply the pupil with dark chocolate.
Mix the icing sugar with lemon juice to create a thick paste and use to decorate the sheep heads with wool, eyebrows and nose.
