Soak the gelatine in cold water.
Bring the vanilla pod, cream and sugar to the boil and remove from the heat. Squeeze the excess moisture from the gelatine and stir into the cream mixture. Strain through a sieve into four small glasses. Leave to cool, cover and chill for at least 4 hours.
Serve garnished with strawberries if desired.
