Combine milk with orange zest and 40 grams ( approximately 1 1/2 ounces) of sugar, bring to a boil. Add semolina, stirring, and cook for about 5 minutes.

Peel apple, quarter and core. Cut into thin slices. Caramelize remaining sugar with butter in a pan, add apple slices and caramelize.
3.
Place semolina cream into bowls and top with caramelized apple. Serve.
